LuLu’s L.A.(Lower Alabama) Caviar

6 cans (15oz) blackeyed peas, rinsed and drained
1/2 c red onion, chopped
1/3 c each of green, red, & yellow pepper, chopped
1 c cherry tomatoes, quartered
1/2 c parsley, chopped
1/2 c balsamic vinegar
1/2 c olive oil
4 T sugar
Salt & Pepper to taste

Combine above ingredients and marinate for 24 hours. Serve with saltines or tortilla chips.

LuLu's Meatloaf

1 pound ground beef
1/2 c Chicken In a Bisquit Cracker, crumbled
1 egg beaten
1/2 Grated apple
2 T yellow mustard
1/2 medium onion grate
2 T ketchup (optional)

Combine all and mix. Place in ungreased loaf pan. Top with ketchup. Bake at 350 degrees for one hour. Makes one meatloaf

FOR MEATLOAF SANDWICHES

Cool meatloaf overnight. Slice in 1/2" pieces. Saute slice in hotv skillet or over grill. Serve on buttered and toasted loaf with sauteed onions and green peppers. Yum!!!

Lulu's West Indies Salad

1 pound FRESH jumbo lump crabmeat
1 small onion, sliced thinly
3 oz apple cider vinegar
4 oz vegetable oil
4 oz ice water
salt and pepper

In a tupperware container, place a layer of crabmeat (picked over for shell). Add a layer of onion. Salt and pepper. Place remaining layer of crabmeat. Add another layer of onion. Salt and pepper. Combine all liquid ingredients and pour over salad. (Make sure you put at least 4-6 ice cubes in with it. Cover tightly and turn upside down. Let marinate for at least three hours. It's better overnight. Serve with saltines.
